Filet Mignon

Filet mignon is a cut of meat taken from the smaller end of the tenderloin, and it is considered to be the most tender cut of beef. Brush room temperature filets with a high smoking oil (vegetable not olive), season with kosher salt, freshly ground pepper and it is ready for a cast iron skillet for searing or for your grill. Serve with garlic mashed potatoes, green beans and don’t forget, a big bold red wine. Other ideas are sauteed mushrooms or top it with garlic butter mushroom sauce!
