Grilled Sea Bass and Marinated Eggplant

There are several species of sea bass in the world, including ones in the Mediterranean. The sea bass we are more familiar with are a small fish that live in the western Atlantic ocean and along the coastline of South America. Sea bass has a delicate flavor and is best baked, grilled or pan fried. Served here with Marinated eggplant, sea bass works well with a marinade of fresh lime, cilantro, dill, or Thai basil. For a little heat, add Fresno chiles.
