A ribeye steak comes from center best portion of the rib steak, without the bone. With excellent marbling, it is flavoursome and tender which makes it ideal for grilling. As with all steaks, bring it to room temperature for 30-60 minutes before seasoning it and cooking on a cast iron pan, or on the grill. The high level of marbling means ribeye on the grill will smoke and flare a lot and requires your full attention to not char or overcook. Serve it with caramelized onions, corn on the cob and a fresh greens salad, or any of your favourite side dishes.
