Scampi is a European crustacean which closely resembles a lobster. When cooked, scampi look like large shrimp and as with shrimp, they are delicious with butter, garlic, lemon, and white wine. Like all the members of the shellfish family, scampi also cook quickly and should not be overcooked. They can be butterflied and grilled in their shells as shown here.
