Haddock loins have a delicate flake and a slightly sweet taste. Loins are cut from the thick section on the underside of the fillet, and they can be poached, pan-fried, sauteed, or included in soups and stews. A traditional way to serve haddock in New England is to coat it in breadcrumbs, butter, salt and pepper, lemon and parsley and bake it. Very similar to cod, it has a melt in your mouth texture.
