Orange Roughy

Orange Roughy is a deep water fish from New Zealand and Australia, and it is known for its orange skin, spiky fins, and bony head. Its raw flesh is pearly white which becomes opaque when cooked, and it has a delicate flavour. The moist, large-flaked meat holds together well after cooking, and it goes well with almost any seasoning or sauce. This fish can be baked, sauteed or poached. Deep-frying and grilling are not recommended.
