Sole fillets are very thin, and so they cook fast. Sole does not have much flavor, so it takes on the flavors you apply to it. Try dill, lemon, garlic, capers, green onions, or more spicy choices. It can be baked, or pan fried quickly. A Mediterranean sole dish would use lemons, green onions capers and dill with lots of butter. It only needs to be baked 10-15 minutes at 375. Serve with salad and Greek potatoes or rice.
